A naturally sparkling, hazily yeasty, and softly fruity wine from the indigenous Sicilian variety, Catarratto. Certified organic farming with some biodynamic principles, including the 'sovescio' method wherein beans are planted in the wintertime to add nutrients to the soil and then cut down and tilled into the dirt before grape's growing season. Soils are red sand with limestone beneath. All wild yeast for fermentation, the wines are left unfiltered and therefore are naturally cloudy (called col fondo), and are bottled before the ferment is complete without any additions of suflites.
