A bright, dry sparkling white made by the legendarily mustached natural winemaker Jo Landron. This cuvee is a negociant project made with organic grapes selected by Landron. Largely it is Folle Blanche, a lean and highly tart white variety that adapts well to making sparkling wines as the acidity pairs with the bubbles. There is also 20% Pinot Noir, giving the wine lovely structure. Drinks something like a dry Reisling Sekt, would be wonderful with seafood and cheeses or for an pre-dinner toast.
