A Friulian sparkler that is bright, yeasty and dry of non-vintaged Ribolla Giala. Somewhere between the charmat technique of Prosecco and method ancestrale of Pet-Nats, this wine is fermented in a tank that is completely sealed before the primary fermentation finishes resulting in natural bubbles. Organic grapes from 30 year old vines, native yeasts, no filtering and this wine is sealed before sulfites are added and bottle as is.

"i Clivi's viticulture can be described by 3 basic elements: (a) very old vines - at least 60 years of age, but many are 80 or over - for natural concentration, complexity and elegance as well as marked individuality and strong character; (b) certified organic cultivation; and c) all vineyards are on the hillside, with perfect exposition (south-east) and ideal water drainage. These wines boast extraordinary complexity with a richness of flavors and brilliant minerality for an unforgettable drinking experience. The native varietals of Ribolla Giala, Friulano, ancient Malvasia and Verduzzo here are whole-cluster vinified on native yeasts, aged on the lees, unfined and unfiltered in old barrel or tank. You simply can't find more natural wines."
