A blend of hybrid grape varieties sourced from vines found growing nearby Fable Farm and Fermentory. 45% St. Croix, 35% Frontenac Noir, and 20% Marquette. Grapes were destemmed by hand. 40% were foot stomped and the rest left to ferment as whole berries. After a month of maceration the wine was separated from the marc. No addition of sulfur.
Fable Farm Fermentory is a community based group effort in Vermont focused on honest land stewardship dependent on each season. They produce wine and vinegar from grapes, apples, pears, honey, tree saps, and occasionally locally sourced fruits and herbs.
