This is a Clairet in its original sense, a light red wine. Historically this style would have made up a large part of the exported wines from Bordeaux as well as what many of the locals would have drank. Fermentation with indigenous yeasts for 48 hours in concrete before racking to a 2nd use barrel for resting on the lees for 3 months. A blend of 45% Merlot, 45% Cabernet Sauvignon, 5% Cabernet Franc and 5% Petit Verdot all estate grown with biodynamic farming. No sulfites are added and no fining or filtering is done.
