"Dense and ripe, yet with complicating notes of herbs and dried fruit. This benefits from spontaneous fermentation in concrete tanks and bottling with a minimal use of sulfites, lending the wine a serious sense of place and complexity.
Pacina is located in the DOCG of Chianti Colli Senesi on the southern side of Castelnuovo Berardenga and husband and wife team Stefano and Giovanna cultivate and produce Sangiovese in harmony with their terroir, without technology, and have always been 100 percent organic. The couple is completely tied they are to the place and Sangiovese particular to Pacina. They speak about ‘Pacina’ as if it is the matriarch of the family. The convent on the estate dates back to around 900 A.D. Giovanna is the third generation to care for the estate, and together with her husband Stefano who dedicates all of his time and passion in the vineyards and cellar, they also produce olive oil, have flower, vegetable and fruit gardens, as well as a place for guests to come and stay and enjoy the beautiful estate."
