An uber-natural version of everyone’s piney Greek wine white. 100% biodynamically and USDA organic Savatiano allowed to macerate for 3 to 6 days on the skins in steel tanks. Embracing a philosophy of extremely low intervention this wine has nothing but the traditional, locally produced pine resin added. No sulfites at any point nor any temperature controls. The pine resin notes are fairly subtle for a retsina and the tannin structure quite robust bronze colored wine, very unique. Needs to be drank swiftly, very susceptible to oxidation once opened.

"The Georgas Family is located in the historical area of Spata, the center of retsina and the unexplored Savatiano white grape, where they can trace their agriculture roots 380 years back. They cultivate their 4.5 ha of estate owned dryvineyards biodynamically, with very low yields (21 hectoliters / ha). Vinification is natural, through spontaneous fermentation, no intervention, no sulphur (for most wines), and up to a week of skin contact, which gives their wines a characteristic bronze color."
