A wonderful collaberation between the great Bea clan of Umbria and a group of Cistercian Nuns who live in Lazio just about 90 miles north of Rome. It's here, in this pristine and contemplative setting, that some of Italy's most intruiguing wine is being made by about 80 women of the order. A white long with longer maceration time giving this wine a beautiful complexity of herbs, apricots, and spice. We think it smells a bit like a beautifully aged library book.
