Soliko Tsaishvili is the Georgian winemaker behind simply named Our Wine company. All the grapes are native varieties grown in the Kakheti region under biodynamic practices on several vineyard sites separated according to their terroir. Rustic winemaking techniques, there is skin contact during fermentation and aging is done in the traditional large clay vessels known locally as kvevri, often called amphora in the West. Oddly, the grapes are destemed by hand, everything is done by hand in fact, only to have some of them re-added to the kvervi. Bottled unfiltered and only a tiny dose of sulfur for stability.
