A frothy, sparkling rustic style dry white from Emilia-Romagna. Done in the traditional method of re-fermenting in the bottle without fining or filtering, which differs from most modern prosecco and lambrusco that is done in bulk tanks. All biodynamically grown Pignoletto, an indigenous white variety of Italy. Drinks like sorta like a German Hefeweizen, with pronounced lemony and yeasty elements.
