A Basque cider from the French side of the border. Originally a winemaker Bitxinxo Aphaule became enamored with cidermaking and carried over many of the techniques from the vineyard and cellar to his new passion. Mildly funky, naturally softly sparkling and left unfiltered.
From the mouth of the importer (De Maison Selections):
"Each of the different apple varietals are fermented seperately with indigenous yeast for 4 months. Bottled aged for 3 months before release. Mild carbonation occurs naturally in bottle, no dosage. There is 10g/L of residual sugar."
